
Pandispan cake
Easily cook at home the classic recipe for pandemic cake, otherwise called the Genovec or Pâte Génoise cake. First prepared by an Italian chef in the 19th century, this sponge cake combines fantastic flavors of Italy and France with some very simple ingredients.

Step 1Weigh the eggs and separate the whites from the yellow.
Step 2We take two cups. In one of them beat the egg yolks with half the sugar and in the second bowl beat the other half with the egg whites.
Step 3We combine both measures into the mixer. Transfer the flour first to a sieve and then add to the mixer. Mix them carefully.
Step 4Prepare the dough and place it in a greased pan with butter and flour.
Step 5Bake in the oven for 30 minutes at 170 degrees.
