Blueberry parfait

Blueberries are on the super fruit list! This lightweight parfait brings them together in a layer of pane, with very little fat and sprinkled with cinnamon particles. The contrast of the flavors creates a fantastic and fresh combination!

150 g of sugar

100 g walnuts

100g marmalade with red blueberries (or even marmalade with forest / cherry fruit)

100 ml of confectionery

4 eggs

A little cinnamon

Directions

Step 1Whisk the eggs white on a bowl and then add half of the sugar, mixing lightly.

Step 2Beat the pastry pan in the mixer (or in the absence of just enough to beat it with the egg whip) until creamy.

Step 3Add the egg yolks with the rest of the sugar, and beat well until a uniform mass is obtained.

Step 4In the same bowl where the mass is obtained add the marmalade with red cranberries, whipped egg whites and nuts. We try very carefully to mix the whole mass, until we get the cream well attached to all the ingredients.

Step 5Put the obtained mass in a long rectangular shape and refrigerate, where it is left for at least 6 hours.

Step 6Extract it from the freezer and the fragrance will be ready to serve to your liking and fantasy, using marmalade or red cranberries for decor.
