1/2 eggplant

1/2 green squash

Some spinach leaves

1 tomato

1 potato

1 small onion

2 fresh onions

2 garlic cloves

2 lemons

A little fresh mint

A little basil

Directions

Step 1Wash vegetables with running water and cut them into cubes. We cut the spices thin.

Step 2In a pot put olive oil and vegetables (except tomato, lemon and spices). Mix in slow fire.

Step 3When the vegetables start to soften, add the tomatoes and a little later the vegetable juice.

Step 4Let stand for 40 minutes. For the last 10 minutes we pour butter, salt, pepper, lemon juice, parsley, nettle and basil.
